Coyote's is a good restaurant. We came for lunch and it seems to be the hopping place for local business men and women on lunch breaks. We were in tshirts and jeans and seemed a little underdressed for the clientele even though I know the dress was appropriate for the establishment. Anyways, service for lunch was fast and attentive. We mostly liked the dishes that we got. The avocado taco plate was really good...a sude of the crispy Brussels sprouts where really good... The side dishes of black beans and cilantro rice was good. The least favorite dish we had was the chile lime tacos...everything about it was kind of dry...especially the chicken. The flavor was OK, just overall dry. I am new to Greeley and have tons of other places I'd like to try, so it will be a while before I come back, but I'd still give it another go as there are other things on the menu I would like to try. Its unfortunate that the compitition is fierce here in Greeley for mexican/southwest restaurants, as I believe in a different market this could be a standout establishment. For lunch the value is pretty good. 2 taco plates, a small side and a coffee, we got out at about 14$ per person.

I went with a group of ladies. The food was good, but I was told the Chile rellenos were wonton type wrapped and very crispy. They were breaded and barely fried, more soft. Our waitstaff was new and said that is what the management said.

I gave this place 3 stars because the food was mediocre. It has the same vibe as Chili’s. We got the flight of drinks which were the best part of the meal.We got the avocado rolls to start & they were good. I ordered the carne asada plate which came with a lobster & shrimp enchilada, the piece of meat was tiny but the flavor was good, the seafood enchilada was interesting I’ve never personally had an enchilada that way. Beans & rice were fine. The Tacos en fuego, was a bit of a let down cause they serve it to you like fajitas. They light the skillet on fire which was cool to watch but then you have to build your own tacos, which is fine but tacos are usually already really built when served to you. I think a more fitting name would be Fajitas en fuego. Would I came back to this restaurant? I would not. I dont feel the price matched the quality of food.

So many amazing things about this place, hopefully I remember to list all of them. Sangria swirls are 10/10 delicious and super strong. Fajitas are amazing and worth the splurge Always. The service has almost always been perfect, even on their busiest nights. Kate the bartender is 10/10, super kind and amazing at her job. The breakfast burritos are 100/10 sometimes so spicy I can’t even taste them but still delicious somehow. I absolutely love this place and will continue to frequent it as long as I am living in Greeley.

This is my favorite place to go with my best friend. We have a history here. This was the first place we went after becoming friends and we stayed for hours! Years and years later, we are still best friends and the chips and salsa at Coyote's may be to blame! My friend and I come here often to enjoy chips and salsa, a house margarita, and occasionally dinner or dessert. I can honestly say I've never been disappointed. I recommend the chimichungas and the orange margarita, they're my favorite! The staff is great, the food is great, and the prices are great!
